Oatmeal cookies

Jasper wanted to make oatmeal cookies the other day. I do not love to bake and mostly because I just cannot seem to follow a recipe. So, true to form I looked at several and came up with one that would have a bit more nutritional punch. What is fantastic is that these are egg and dairy free. Also, because I used Spelt flour- they may be tolerated by some with wheat sensitivities. My kids liked them- the littlest took a few tries to get used to the texture and my husband told me that after each bit they grew on him more and the flavor made him want another! I put some in the freezer for later use- but found out they taste good that way too!
Here is the recipe- alter as you like! We all know I do
Preheat oven to 325
2 Cups of oats
1/4 cup almond flour/meal (can find in health food stores or whole foods)
3/4 cup spelt flour (see above)
tsp salt
tsp kelp (optional- gives a “saltier taste” to the cookies)
1/3 cup agave nectar
1/2 cup water
1/4 cup maple syrup
1/2 cup coconut oil (I warmed until liquid)
tsp vanilla
1/4 cup carob chips or chocolate chips
1/4 cup nuts (optional)
1/2 cup gogi berries (can use raisins, dried cranberries or dried cherries)
Mix dry ingredient. Mix wet. Mix together. Spoon drop on oiled (I used coconut oil) cookies sheet. Bake 15 minutes. (check- may have to do a few minutes longer)

Hi Sara, those sound delicious. Where does one buy the two types of flour? I’ve never seen spelt flour before.

I found both flours at “My Organic Market”- aka MOMS-
They can also be found at whole foods or most health food stores. If all else fails- they can be found on line. Let me know if you have any trouble finding- and let us know how they turn out!
