Easy and delicious homemade Granola Bars
My son went through a phase where all he wanted to eat were granola bars for snack. Because they are so convenient, and easy to bring to the go, it was hard to “get away” from the monotony of it all, and I found myself mindlessly grabbing granola bars for the car ride at every turn. I continuously questioned the ingredients, and even tried to stick to the “raw bars” to ensure he was getting the most nutrients possible at every convenient snack. I kept thinking I could do this myself. It was just a matter of doing it- and now they are so easy to whip up.
Preheat oven to 350 degrees.
Mix the following:
1 can organic sweetened condensed milk
3 cups organic rolled oats
1 cup shredded organic coconut
3/4 cup organic goji berries
1/2 cup shredded or chopped nori
1/2 cup organic chocolate chips (I use sunspire)
Place in 9×13 greased pan and bake for 25-30 minutes.
*These freeze very well. They are sweet and I do consider them a “sometimes” food, so I freeze 1/2 of them and pull out weeks later for an easy already prepared snack or meal!
