Almond milk

I have been wanting to do this for so long and finally thanks to a blog, Two Friends Write, I did it. They made it sound so easy, and it was.  I bought a bunch of organic almonds in the bulk section, and a nut bag, and we (my kids and I) were ready to go. Following the blog, I soaked almonds overnight (in filtered water). In my vitamix, I put 2 cups of almonds with 6 cups of water and blended on high. I strained this through a nut back in a glass container. I repeated until all were blended. I made too much this time I think! Lots of smoothies this week :) and my parents will get some tomorrow. I flavored it with 10 drops of vanilla stevia (to a large container). You can leave plain or sweeten to liking. I am drying out the pulp in the oven on the warm setting- to use for flour or add to things. I will need to research and if you are a baker (I am not ) you should sign up for Two Friends Write as they are going to use pulp soon and post a recipe. They dried their pulp out at 300.

You would not believe how delicious this is. It is so much better than store-bought and looks so beautiful. I am really excited they shared this with my and I pass along to you!
