Granola
3 cup oats
1/2 cup cashews
1/2 cup coconut flakes (unsweetened)
2 tbsp coconut oil
Maple syrup
honey
generous shake of cinnamon
Shake of kelp (optional, adds nutrients and slight salty contrast to sweetness)
Preheat oven to 300. In large baking dish combine all ingredients. Use enough maple and honey to moisten all oats. Put in oven and stir every 10-15 minutes until browned. If adding fruit (cranberries, raisins, gogi berries… add at the end so they do not burn).
