White bean salad

White beans (soaked overnight and cooked accordingly I use my rice cooker and thow in a piece of Kombu)
1 head of kale (I used dinosaur, could use any type, or any green really!)
1/2 Lemon (or more to taste)
1/2 bunch of cilantro (I chop in mini cuisinart, stems and all)
8-10 leaves basil (cut into small pieces with scissors, or also in mini cuisinart)
Olive Oil
Sea salt and pepper

Put together, chill, Enjoy!

**This makes a great lunch to go, especially for kid’s school lunches. It is good room temperature and packs a lot of nutrients, including protein to sustain their energy.
