Ground beef and white beans over rice

Nothing fancy. An easy one pot meal that the whole family enjoys and makes great leftovers for lunch.

White beans
Kale
**I used leftover white bean salad, but you could just use white beans, canned or prepared, and chopped greens)
garlic scapes (chopped into 1/2 inch pieces)
red onion (I used 3 small bulbs from market, could use medium onion, diced)
2 cloves garlic
olive oil
grass-fed ground beef (I used 1 lb)
1 32. oz.  can diced organic tomatoes
10-12 leaves basil

saute garlic scapes, onion, and garlic in olive oil. Add ground beef. saute until cooked to your liking. Add bean salad (or beans and greens). Stir in tomatoes. Cut fresh basil and stir in. (We grow on our deck to always have on hand. It is very hardy and easy to grow) Enjoy over brown rice or pasta. We used left over brown rice.
